Bacon-Wrapped Zucchini Bites Cooked in an Air Fryer

Bacon-Wrapped Zucchini Bites offer a flavorful, savory option for snacks or starters. They’re compatible with a paleo diet and are a great source of protein. Every Tuesday, our community group enjoys a shared meal, which lately has been focused on appetizers. It’s a delightful tradition where each member brings their preferred appetizer, though finding new recipes to contribute has become a bit of a challenge for me. After repeatedly offering veggies with hummus, venison sausage, and guacamole, I’ve started to search for fresh ideas. My criteria for appetizers are that they must adhere to the paleo diet (ensuring there’s something I can eat), be budget-friendly, and simple to prepare. Last week, as I pondered over what appetizer to bring, I came up with the idea for these Bacon-Wrapped Zucchini Bites.

Ingredients

  • 1 large zucchini, peeled, quartered lengthwise, and cut into bite-sized pieces
  • 6 slices of bacon, each cut into thirds
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • Salt and pepper, to taste
