Breakfast Burrito Recipe

Ingredients:

For the Tofu Scramble:

  • 14 oz (400g) firm tofu, drained and crumbled
  • 1 tablespoon nutritional yeast (optional, for added flavor)
  • 1 teaspoon ground turmeric (for color and flavor)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon vegetable oil

For the Breakfast Burrito:

  • 4 large whole wheat or gluten-free tortillas (approximately 10 inches in diameter)
  • 1 cup cooked black beans (canned or homemade)
  • 1 cup cooked quinoa or brown rice
  • 1 avocado, sliced
  • 1 cup baby spinach or mixed greens
  • 1/2 cup cherry tomatoes, halved
  • Fresh cilantro or parsley, chopped (for garnish)
  • Hot sauce or salsa (optional, for added spice)
