Chicken Cordon Bleu

4 boneless, skinless chicken breasts
Salt and pepper to taste
4 slices of ham (preferably York ham)
4 slices of cheese (preferably Swiss cheese or Emmental cheese)
Flour for coating
2 beaten eggs
Vegetable oil for frying
Preheat your oven to 180°C (350°F).
Place each chicken breast between two sheets of plastic wrap and use a meat mallet or rolling pin to flatten them until they have a uniform thickness, being careful not to break them.
Season the chicken breasts with salt and pepper to taste.
Place a slice of ham and a slice of cheese in the center of each chicken breast.
Carefully roll up each chicken breast, making sure the ham and cheese are well enclosed. Secure the ends of the roll with toothpicks.
Roll each stuffed chicken breast in flour, making sure they are well coated.
Dip each chicken breast in beaten egg and then coat them in breadcrumbs, gently pressing to ensure they adhere well.
Heat enough vegetable oil in a large skillet over medium-high heat.
