Use any kind of chocolate chips you like. I prefer 50% cocoa dark chocolate.

Especially at this time of year, we have quite a surplus of baking ingredients in the cupboard. I blame the Costco effect for most of that.

Yes, there are savings to be had, but instead of buying one can of sweetened condensed milk for example, I end up with two extras.

Easy and freezer friendly too.

A big bag of coconut and another of chocolate cookie crumbs were also more than half full after being opened to use in other recipes. All of this had to go.

I am determined to not bake anything in January! (Hmmm, let’s see how that goes.)

So with the success of the first recipe, the elements were all there for these Coconut Bounty Cookie Bars, and I got to clean out the baking cupboard too.

At this time of year, I never worry about too many treats in the freezer. Before the Holidays, we prepare cookie trays for family and friends, so the surplus is always shared and never wasted.

I’m sure, you too can find a few willing recipients to share in your cookie bounty.
