For the filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup chopped spinach or kale
  • 1 cup chopped mushrooms
  • 1 cup cherry tomatoes, halved
  • 6 large eggs
  • 1 cup milk (you can use whole milk, almond milk, or any milk of your choice)
  • 1 cup shredded cheese (cheddar, Swiss, or your favorite cheese)
  • Salt and pepper to taste
  • Optional: fresh herbs like parsley or thyme for garnish
