When zucchini is in abundance, this Georgian-style preparation is a fantastic alternative to lecho and other canned vegetables. The resulting dish is a harmonious blend of spicy, sweet, and acidic flavors typical of Caucasian cuisine. Here’s how you can prepare and can 15 jars of this delicious zucchini recipe.

Ingredients:
For the Vegetables:

5 kg zucchini (peeled and cut into medium-sized slices, or unpeeled if using small, tender zucchini)
1 kg onions (cut into half rings)
1 kg sweet bell peppers (cut into strips)
Salt to taste
50 ml vinegar
A pinch of black pepper
For the Sauce:

1.5 liters tomato juice or thick tomato sauce (diluted to the desired consistency)
200 grams sugar
2 tablespoons salt
1 teaspoon black pepper
1 teaspoon red pepper (adjust to taste)
1 teaspoon ground coriander
3-4 cloves
150 ml vegetable oil
100 ml vinegar
