It doesn’t get easier than this! Super easy to make and always a hit!

Instructions:
Prepare the Lemon Filling: In a large bowl, whip the softened cream cheese until smooth. Blend in the instant lemon pudding mix, lemon juice, and vanilla extract. Gradually add the milk, mixing until the mixture is smooth and thick.
Layer the Cake: In a 9×13 inch baking dish, arrange a layer of graham crackers. Spread half of the lemon filling over this layer. Add another layer of graham crackers, followed by the remaining lemon filling. Finish with a final layer of graham crackers.
Add Topping: Evenly spread the Cool Whip over the top layer of graham crackers.
Chill: Refrigerate the cake for at least 4 hours, or overnight, to soften the graham crackers and blend the flavors.
Serve: Cut the chilled cake into squares. Optionally, garnish with lemon zest or thin lemon slices for an extra touch.
