lemon cake

Preheat the oven to 175°C – 195°C.

First, grate the peel from the 3 lemons and squeeze two lemons out of them.

Then stir the eggs and sugar until foamy. Sift the flour and gradually add it with vanilla sugar, baking powder, lemon zest and margarine. Mix everything well. Spread the dough onto a baking tray lined with baking paper. Put in the preheated oven and bake on the middle shelf for approx. 20 minutes.

Now gradually mix a glaze from the lemon juice and the powdered sugar – please use the lemon juice very sparingly, the glaze has to be nice and thick.

While the cake is still warm, prick all over with a fork. This makes it nice and juicy because the glaze can seep in. Then quickly spread the icing over the warm cake and let it cool.
