Oma’s Marmorkuchen (Grandma’s Marblecake)

Authentic German recipe for a fluffly and moist Marblecake – will make you want to slap ya mamma!
Ask any German what they do on a Sunday afternoon and the answer will be ‘kaffee und kuchen’, (coffee and cake) of course. Enjoying quality time with loved ones while taking pleasure in the wonderful sweets the country has to offer.
Marmorkuchen was one of my favorites growing up and my Oma made it for me frequently. The aroma coming from the oven had me reminiscing of days gone by.
But enough of the blah, blah, blah! I know you want the darn recipe, so holding true to my promise – here it is.

  • Mixer – handheld
  • Loaf or Cake Pan (Springform or Bundt)
  • Mesh Strainer or Flour Sifter
  • Large Mixing Bowl


  • 2 1/2 Sticks Butter or Margarine softened (250 grams)
  • Cup Sugar 250 grams
  • 2 Tablespoon Vanilla Extract or 2 packs Vanilla sugar
  • 4 Large or Extra Large Eggs
  • 1/2 Lemon Zested (optional)
  • 1/2 Cup Milk
  • 5 Tablespoons Cocoa Powder Unsweetened
  • 4 Tablespoons Rum I prefer Spiced Rum. This may be substituted for equal amount of milk
  • Powdered/Confectioners Sugar for dusting
  • 2 Cups Self-Rising Flour (500 grams) sifted
  • If using Plain Flour add 1/2 ounce Baking Powder
