Roast Beef Recipe with Gravy

This simple and juicy Roast Beef recipe with homemade pan gravy is just as impressive as any holiday roast. Roasting beef in the oven is easy, and every bite melts in your mouth.



3-4 lb top round roast beef*, at room temperature 1.5 to 2 hours before cooking
3 Tbsp olive oil
1 Tbsp fresh rosemary
1 Tbsp minced garlic, from 3 cloves
2 tsp thyme leaves, or 1/2 tsp dried thyme
1 1/2 tsp fine sea salt
1 tsp freshly ground black pepper
For the Beef Gravy:
1/4 cup cold water
1 1/2 Tbsp corn starch
1/2 cup dry red wine
1 1/2 cups beef broth
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp fine sea salt, or to taste
1/4 tsp freshly ground black pepper, or to taste
2 Tbsp unsalted butter
