Wonton Meatballs

These flavor-packed Paleo and Whole30-friendly Wonton Meatballs remind me of my mom’s wontons, and my family loves them, too—including even my pickiest son!

Ingredients

¼ ounce dried shiitake mushrooms soaked in water for at least 30 minutes
▢ ½ pound shrimp peeled and deveined
▢ 1 pound ground pork
▢ 2 scallions finely chopped
▢ ¼ cup cilantro minced
▢ 1 tablespoon coconut aminos
▢ ½ teaspoon Diamond Crystal kosher salt
▢ ½ teaspoon fish sauce
▢ ¼ teaspoon ground white pepper
▢ ¼ teaspoon toasted sesame oil
▢ Ghee or cooking fat of choice
▢ 1 scallion sliced on the bias (optional garnish)
▢ Paleo sriracha optional
