Zucchini Snack Cake with Orange Glaze

This time of year, the zucchini is in abundance and there is endless potential for using this great vegetable. If you are already a fan of zucchini bread, I’d like to introduce you to zucchini cake.

▢1 medium-large Italian zucchini shredded, about 1½ cups
▢¾ cups sugar
▢2 large eggs
▢½ cup butter melted

▢1 teaspoon vanilla
▢¼ cup orange juice
▢2 cups all-purpose flour
▢1 ½ teaspoons baking powder
▢1 teaspoon baking soda
▢¼ teaspoon kosher salt
▢2 cups powdered sugar
▢3 tablespoons orange juice
