curd pancakes

FOR THE DOUGH:
1. Mix eggs, egg yolks, milk and salt. Stir in flour with a whisk. Heat some butter in a pan and use the dough to bake about 8-10 thin pancakes (Ø 18-20 cm).

FOR THE FILLING:
1.Drain the quark in a sieve. Rinse the lemon, dry it and rub the peel. Squeeze out the juice. Beat the butter, lemon zest and powdered sugar with the hand mixer until light and creamy.
2.Separate egg. Stir the egg yolk, quark, pudding powder and lemon juice into the butter mixture. Beat the egg white and 1 pinch of salt until stiff. Fold the egg whites and raisins into the curd cream. Preheat the oven to 180 degrees, fan oven 160 degrees, gas mark 3.
3. Spread the pancakes with quark, roll them up and place them in a greased baking dish (20 x 28 cm). Bake in the oven for about 12-15 minutes.

FOR THE CASTING:
1. Mix all the ingredients, pour over the pancakes and bake for another 15 minutes. Dust with powdered sugar.

TIP !
The pancake tastes particularly good if you drizzle it with a little orange liqueur immediately after baking and only then dust it with powdered sugar.
