Mango Cake has a layer of ultra fluffy, flavorful vanilla cake, a cloud of pillowy whipped cream, and sweet, juicy mango slices on top
Ingredients
For the Cake:
- 1 cup + 3 tbsp cake flour, spooned & leveled 128 grams
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3 and 1/2 tbsp salted butter, softened at room temperature
- 3 tbsp vegetable oil
- 3/4 cup + 2 tbsp granulated sugar
- 1 large egg, at room temperature
- 2 tsp vanilla extract
- 1/4 cup sour cream, at room temperature
- 1/2 cup milk, at room temperature I used 2%
For the Whipped Cream
- 1 cup cold heavy cream
- 1/4 cup powdered sugar
- 2 tsp vanilla extract
For the Mangoes
- 2 large ripe mangoes, peeled & sliced
- 1-2 tsp granulated sugar, optional
- pinch of cinnamon, optional
