Mango Snack Cake

Mango Cake has a layer of ultra fluffy, flavorful vanilla cake, a cloud of pillowy whipped cream, and sweet, juicy mango slices on top

Ingredients

For the Cake:

  • 1 cup + 3 tbsp cake flour, spooned & leveled 128 grams
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3 and 1/2 tbsp salted butter, softened at room temperature
  • 3 tbsp vegetable oil
  • 3/4 cup + 2 tbsp granulated sugar
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • 1/4 cup sour cream, at room temperature
  • 1/2 cup milk, at room temperature I used 2%

For the Whipped Cream

  • 1 cup cold heavy cream
  • 1/4 cup powdered sugar
  • 2 tsp vanilla extract

For the Mangoes

  • 2 large ripe mangoes, peeled & sliced
  • 1-2 tsp granulated sugar, optional
  • pinch of cinnamon, optional
