SLOW COOKER CHICKEN WITH TOMATOES AND BELL PEPPERS

DIRECTIONS

1. In a large bowl, combine garlic, vinegar, chicken stock, tomato paste, honey, olive oil, Italian seasoning, salt, pepper and red pepper flakes and pepper.

2. Place chicken thighs, onion, tomato paste, tomatoes, celery, and bell pepper in the slow cooker and pour the sauce mixture over. Give a quick stir to combine everything well.

3. Cover and cook on high heat for 3 to 4 hours or low heat for 7 to 8 hours until the chicken is fall apart tender. Adjust seasoning with salt and pepper, garnish with fresh parsley and scallion and serve immediately over rice or noodles. Enjoy!
