CHICKEN BURRITO BOWLS WITH CAULIFLOWER

This chicken burrito bowl with cauliflower is tasty and super nutritious. Plus, it comes together quicker than getting takeout!

INGREDIENTS

1 lb (450g) ground chicken (or turkey)
3 tablespoons olive oil
1/2 yellow onion, minced
1 medium head of cauliflower (or one packet of riced cauliflower)
1 small can of diced tomatoes, drained
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon chili powder, optional
1 teaspoon cumin
1/4 cup (60ml) low-sodium vegetable or chicken broth
2 cups shredded Monterey Jack or Mozzarella (or your favorite cheese)
Salt and fresh cracked black pepper
